Cherry Cobbler Cake

Is it Cobbler? Is it Cake? Does it matter what we call it as long as it is warm and sweet and yummy?



1 cup flour

1 1/2 teaspoon of baking powder

1 cup brown sugar

1/4 cup sugar

pinch of salt

1 cup soy milk

1 teaspoon lemon juice

4 Tbsp earth balance (or what ever vegan butter you use)  Melted  Plus more to butter the dish with.

2 cups of cherries pitted and halved  (or berries, or stone fruit)


Preheat oven to 350

Combine lemon juice and soy milk allow to curdle

Combine flour, brown sugar, baking powder salt

Add Milk and melted butter to dry mixture mix until smooth


Butter a baking dish ( I use a 12×9 ceramic oval)

Pour in the batter

Place the cherries over top of the batter

sprinkle 1/4 a cup of sugar over the fruit and the batter (gives the top a sweet and satisfying crunch)

bake for 50-60 minutes.
